Basic Mead

10 lbs Honey                                        3 tsp Acid Blend

3 tsp Yeast Nutrient                            Yeast

Water (enough to make 3 gal)            3 tab Campden (optional)

Use good quality honey.  Mix honey and water.  Heat to 165-175 degrees F for 20 minutes. Do Not Boil  Skim the to if wax appears.  Let cool to 75 degrees F and transfer to primary, add acid blend, nutrient, and yeast. Stir vigorously for 1 minute.  If you add Campden wait 24 hours to pitch yeast.

Primary fermentation is 3-4 months @ 65-75 degrees F. 

Transfer to secondary for 6 months and slosh around weekly to check for yeast activity.

Takes a long time but, if bottled to soon you may have a mess on your hands.
